Caribbean Jerk & Curry Chicken Thighs
Chicken thighs feature dark meat, which tends to stay extremely moist and tender, while also being able to be cooked fairly quickly. We chopped ours up into bite-sized pieces, then seasoned them with our signature curry and jerk spice rubs, fresh garlic, lemongrass, ginger, and lime juice. The chicken sits on a bed of creamy grits made with coconut milk and lime zest, along with garlic sautéed greens!
